1 15 oz can black beans (a little more than a cup), drained and rinsed
1 cup uncooked quinoa + 2 cups water (3 cups cooked)
6 cups cubed butternut squash
2 cups corn
2 tablespoons olive oil

Instructions:
  • First step is Preheat oven to 400°F.
