1/4 cup milk unsweetened, dairy or nondairy, your choice
1 small box baby spinach 5oz or 140g clamshell box
1 small red pepper diced
6 large eggs
1 tablespoon olive oil

Instructions:
  • First step is Heat olive oil in a oven-safe skillet (like cast-iron) over medium heat. Add red pepper and saute 2-3 minutes. Add green onions and spinach. Saute until spinach wilts. Remove vegetables from pan and set aside.
