Braised Oxtails


Ingredients:
1 large leek, white and pale green parts, chopped
3 lb. (1.5 kg) oxtail, cut into thick steaks by your butcher
Fine sea salt and freshly ground black pepper
6 Tbs. (3 fl. oz./90 ml) olive oil
1/3 cup (2 oz./60 g) unbleached all-purpose flour

Instructions:
  • First step is Put the flour in a shallow bowl and season with salt and pepper. Lightly dredge the meat on both sides, shaking off any excess flour.
  • And then, In a cast-iron casserole dish with a lid or a Dutch oven over medium-low heat, warm the olive oil. Working in batches, brown the meat on all sides. Using tongs, transfer the meat to a plate. Add the leek, bell pepper, onion, carrots and garlic to the pot and gently sauté until the vegetables are soft, 10 to 15 minutes. Add the bay leaves, rosemary and oregano and season well with salt and pepper.
